Horseradish, either grated fresh or mixed with vinegar and cream for the famous sauce, is a popular condiment with a distinctive bite. It can accompany dishes ranging from roast beef to deviled eggs. Now you can easily grow your own horseradish plants and harvest the thick, knobby, cream-colored roots.
This upright perennial's large, 20-inch, ovate, bright green leaves stand straight up, allowing the plant to reach 1 to 4 feet high and spread 1 to 3 feet wide. Insignificant white flowers appear in terminal racemes in early summer.
Because our horseradish roots already have a year under their belts, they are quick to establish in your own garden. Grow in any well-drained, rich soil in full sun. Horseradish can become invasive, like mint, so it also works well as a container plant. Harvest the roots in fall and store them until use in damp sand.
